From Cocoa to Chocolate: The Key Steps

While chocolate making can vary depending on scale and style, the core steps remain consistent.

Roasting

Cocoa beans are roasted to enhance flavor and reduce bitterness. Roasting helps unlock the characteristic chocolate aroma and defines much of the final taste.

Grinding

Once roasted, the beans are cracked and ground into a thick paste known as cocoa mass. During this process, cocoa butter is released, forming the rich base of chocolate.

Refining

The cocoa mass is refined to reduce particle size, creating a smoother texture. This step is what gives chocolate its silky mouthfeel rather than a grainy one.

Tempering

Tempering carefully controls temperature to stabilize cocoa butter crystals. Proper tempering gives chocolate its shine, clean snap, and smooth melt.


Melting, Moulding, Cooling, Filling, and Sealing the Chocolate

Once the chocolate has been refined and tempered, it is gently melted under controlled conditions using specialized chocolate equipment. This stage must be carried out at carefully controlled temperatures, as overheating can affect texture, shine, and stability. Melting typically takes around 30 to 60 minutes, depending on batch size and chocolate type.

The melted chocolate is then poured into moulds, forming the outer shell of each chocolate piece. This step is usually completed within a few minutes per batch, with close attention paid to shell thickness and uniformity.

After moulding, the chocolate shells go through a controlled cooling stage, which typically takes 15 to 30 minutes. This allows the shell to set properly before any filling is added, ensuring it holds its shape during the next steps.

Once cooled, the shells are filled with prepared fillings, such as nut-based creams, caramel, or dessert-inspired flavors. Filling time varies depending on the filling and design, often taking 10 to 20 minutes per batch.

After filling, each chocolate is sealed with a final layer of chocolate, closing the shell and securing the filling inside. The chocolates then require an additional 20 to 40 minutes to fully set before moving on to finishing, presentation, and packaging.

From the moment the chocolate is poured into moulds to the final setting after sealing, the process typically takes around 1.5 to 2.5 hours, depending on design, filling type, and batch size.
